Vanilla Coconut Rice Pudding
1 1/2 cups cold cooked rice1 1/2 cups of coconut milk
2 cups of whole or 2% milk
1/3 cup sugar
pinch of salt
1 vanilla bean, insides scraped out (or vanilla extract to taste)
Directions:
Combine all the ingredients together in a saucepan and simmer
medium-low heat for 40 minutes. Allow to cool and serve.
